Broccoli Potato Bowl


This filling and tasty dish is super quick and easy to make, and the ingredients are very affordable.


What you will need:

  • 1 and 1/2 cups of rice (uncooked)

  • 1 can light red kidney beans

  • 1 bag frozen broccoli

  • 2-3 medium potatoes

  • 1 Tablespoon fresh or jarred garlic

  • 1/2 teaspoon paprika

  • 1/4 teaspoon cracked pepper

  • 1 Tablespoon soy sauce

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 2 Tablespoons flour

  • Oil for cooking

  • Chia seeds for topping

Directions:

  1. Cook rice in rice cooker or on stovetop according to package directions.

  2. While rice is cooking, use a fork to poke holes into the potatoes and microwave for approximately 3 minutes. Take our and let cool before cutting into small cubes.

  3. Cook broccoli in microwave according to directions on the package.

  4. Roll cubed potatoes in flour.

  5. Heat 1/2 Tablespoon of oil in a pan and add potatoes. Cook until lightly browned. Remove from pan and add salt.

  6. In the same pan, add a little more oil if needed and add garlic and cooked broccoli. Add the remaining spices and soy sauce and cook until lightly browned.

  7. Drain kidney beans and add to broccoli on the stove. Cook just long enough to eat the beans through.

  8. Add a bit of rice to a bowl and top with potatoes, broccoli bean mixture and chia seeds. Add more soy sauce if desired.

  9. Enjoy!

This recipe is perfect for making ahead of time for lunches!
