Ingredients
- 1 bag of red potatoes
- 1/2 cup vegan mayonnaise (I like Hellmann's)
- Approximately 1/2 cup chopped dill pickles
- 2 Tablespoons dill pickle juice
- 2 teaspoons trader joe's dill pickle seasoning (or use dill and salt)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon seasoned salt
- 1/2 teaspoon smoked paprika
- 3 Tablespoons nutritional yeast
- 2 green onions
Directions:
Fill a large pot with enough water to cover the potatoes. Bring water to a boil and add red potatoes, skin and all. Boil until you can easily stick a fork into the potatoes. Drain the water and let them cool until you can handle them without burning yourself. Cut potatoes into cubes and put in a bowl in the fridge to chill. Once potatoes are nice and cold, mix the dressing up. Add mayo, pickle juice, dill pickle seasoning, garlic and onion powder, black pepper, seasoned salt, smoked paprika and nutritional yeast to a bowl and mix until combined. Chop green onions and add them along with chopped pickles to the bowl with the potatoes. Mix and then add the dressing. Mix well and put in the fridge for a few hours to overnight before serving.
