Sometimes, I just get a craving for a big bowl of ramen filled with tofu and veggies. If you are in the Kansas City area, look no further than Komatsu in Westport. They have a few vegetarian and vegan options, and the portions are generous. The bowl pictured above is #25 - Vegan Ramen. It contains soft tofu, cabbage, enoki mushrooms, corn, spinach, bean sprouts and green onion in a miso broth with Hokkaido noodles. I also love the steamed edamame with sea salt. So simple, yet so delicious! The staff is always very friendly, which makes the experience even better. I definitely recommend trying it out if you get the chance!
